Charlotte Butterworth aka theneedy.greedy shares her recipe for a fab Puy lentil salad

This month influencer and friend of Lazy Susan, Charlotte Butterworth, aka theneedy.greedy, is bringing you the flavours of South of France with her luscious Puy lentil salad with a herby yoghurt dressing.

This salad has so much going on - you won’t need to serve anything else, and the delicious dressing brings it all together, so every mouthful is utterly divine.

The beauty is you can swap/omit ingredients too. If you don’t want to use courgette, try it with marinated artichokes, or swap out the chicken for some grilled halloumi.

theneedy.greedy's Puy lentil salad with herby yoghurt dressing

You can make it ahead, and bring it to room temp to serve. Leftovers keep in the fridge for 3 days. It’s a salad, so we can be quite relaxed about the quantities...

Serves 4 (generously):

  • 400g chicken fillets (optional)
  • Juice of 1.5 lemons
  • Herbes de Provence
  • 150g Puy lentils - cooked per instructions, approx 40mins, or buy ready cooked
  • Can of chickpeas - drained
  • 1 tbsp Sun-dried tomatoes (chopped finely)
  • 2 courgettes, sliced chargrilled or roasted
  • 2 jarred roast peppers, wiped clean and cut into strips
  • Cherry tomatoes halved
  • Olives
  • 2 - big handfuls of parsley, mint, coriander
  • 2 tablespoons Greek yoghurt
  • Olive oil
  • Leaves to serve on


How to make:

Marinate the chicken fillets for as long as possible (30 mins to 4 hours) in the juice of half a lemon, tbsp each of herbs de Provence, and olive oil. Then roast at 180C, air fry or pan fry until cooked. Slice into bitesize pieces.

Make the dressing by whizzing the fresh herbs with the yoghurt, juice of half a lemon and a little olive oil. I used my Nutri-bullet but a blender works well. Pop it into a jug.

Prep all the other ingredients as outlined above.

Mix the lentils with chickpeas, sun-dried tomatoes, juice of half o lemon, and seasoning.

Lay the leaves on a platter and tip over the lentil mix.

Layer up the salad with peppers, courgettes, cherry tomatoes, chicken, olives etc. Drizzle over half the dressing - leaving the rest for self-serve.
